CSA Week 2

Happy Thursday, everyone! And happy first week to our Bi-Weekly folks! This week's basket was still mostly greens, but boy are the early summer crops coming on!
Here's what's in the basket this week:
-Lettuce: Red Cross, Baby Romaine, or Salad Bowl
-Kale: Curly kale or a mix of Red Russian and Toscano kale
-Swiss Chard
-Radishes: Pink Sparkler and Daikon
-One of the following:
-Turnips
-Cucumber
-Zucchini
-Baby Squash
-Poblano Peppers
This week was an odd one, in that we had multiple crops starting to produce, but in not large quantities, so everyone gets something different. This happens when we are transitioning between crop seasons, like from late spring to early summer, or even mid-summer when the early summer crops are slowing down and late summer crops are coming on.

Kale Frittata
Ingredients:
-1 small bunch kale (any variety)
-4 large eggs
-3 tbsp olive oil
-1 tbsp half & half
-1 tbsp butter
-Salt & pepper to taste
Directions:
-Wash your kale, then finely chop, Remove any large parts of stem.
-In an oven-safe pan over medium heat, sauté kale with about 1/2 tbsp butter and 1 tbsp olive oil, until tender. Salt to taste.
-When kale is tender, add remaining butter and olive oil. Scramble eggs in a bowl and pour over the top of the kale.
-Cook the eggs until almost set on top.
-Place pan in oven under broiler until slightly browned on top.
Tips for Storing Greens:
-If you don't already have a salad spinner, I would suggest purchasing a small one. They are pretty inexpensive and make it so much easier to dry produce.
-I also like to use the produce saver boxes (Oxo brand has some good ones), but they are not necessary.
-Head of lettuce: I would go ahead and chop the lettuce, wash in cold water, then spin dry. if you don't have a salad spinner, you can spread the leaves out on a clean dish towel with a paper towel on top of it. Store in a plastic bag or produce saver box in the fridge.
-Kale, Chard, and other greens: Store in plastic bag (or produce saver box) in the fridge until ready to use, then wash in cold water and spin dry.

Since it rained pretty much all week, I didn't get very many photos of the farm happenings, but I did get one of these tiny frogs that have appeared all over the farm! There are hundreds just hanging out and eating those pesky bugs in the vegetable field!
There are cucumbers, summer squash, and zucchini on all of the vines. I also noticed several tiny green beans started as well! The turnips are almost ready to harvest, and the beets aren't far behind. We also have blooms on all of the tomato plants, so they will be producing before we know it!
I set about 800 pepper plants last weekend, and have 250 more to plant this weekend. The peppers ended up later than usual this year. I had some issues getting the plants started, but hey, 4th time's a charm!
