CSA Week 17

Happy fall, y'all! Boy the weather this week sure took a turn. With only one week to go, we're nearing the end of our CSA season. For our last week next week, I'll have a little extra surprise for everyone. But for this week, here's what you'll find in your box:


-Tomatoes: Red slicer, Carbon, and grape

-Peppers: Bell, sweet gypsy, sweet banana, poblano, jalapeno, habanero

-Kale mix

-New Potatoes

-Baby eggplant or broccolini

Stuffed Pepper Casserole


Ingredients:

  • 2-3 bell peppers, diced

  • 2 cups diced tomatoes

  • 1 lb lean ground turkey (or beef)

  • 1 yellow onion, diced

  • 3 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 tbsp Italian seasoning

  • 1 tbsp dried oregano

  • 1/2 tsp smoked paprika (optional)

  • Kosher salt and pepper to taste

  • 8 ounce can tomato sauce

  • 1 tbsp balsamic vinegar

  • 2 cups cooked brown rice

  • 1/2 cup shredded Colby Jack cheese (or cheese of choice)

Directions:

  1. Preheat oven to 375. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add in the onion, garlic, peppers and ground turkey. Season with salt, pepper, Italian seasoning, oregano and smoked paprika. Sauté for 5-7 minutes or until the turkey is no longer pink and the veggies have softened.

  2. Add in the balsamic vinegar, diced tomatoes, tomato sauce and rice and stir everything together. Top with the shredded cheese then cover the skillet with a lid (or foil) and place the skillet in the oven.

  3. Bake for 15 minutes covered then remove the foil and bake another 5 minutes uncovered. Top the casserole with chopped parsley if desired.


Chicken Parm Kale Salad


Ingredients:

  • 1-2 rotisserie chicken breasts, diced

  • 1/2 red onion, minced

  • 1/2 cup grated Parmesan cheese

  • 4-5 cups fresh kale, chopped very finely

Dressing:

  • 1/3 cup olive oil

  • 1/4 cup white wine vinegar

  • Juice of one lemon

  • 1 tablespoon Italian seasoning

  • Salt and pepper, to taste

Directions:


1. Place all the dressing ingredients in a jar and shake to mix. Taste and adjust seasoning as desired.

2. Toss the kale and red onion together and drizzle with half the dressing. Add chicken and parmesan and toss to combine. Adjust seasoning with more dressing, to your liking.
