CSA Week 17

Howdy Misfit Members! Happy Thursday! Here's what you'll find in your box this week:
-Tomatoes: Orange slicers, purple and red slicers
-Peppers: Green and Purple Bell, Ancho, Jalapeno, Habanero, Banana
-Sweet Potatoes
-Yardlong Beans
-Watermelon (tiny bonus-season surprises lol)
-Sweet Corn

The corn is finally all harvested out of the field for the season. If you notice your ears open a bit on the ends, it's because I was checking to make sure they weren't dry. A tip for making your corn last longer: go ahead and shuck the ears, then store them in a gallon ziplock bag in the fridge. They will last a few weeks using this method.
Mozzarella Stuffed Tomatoes
Ingredients:
-4 medium tomatoes
-1 cup shredded mozzarella cheese
-1/3 cup grated parmesan
-1/4 cup packed fresh basil chopped
-1/4 cup soft breadcrumbs
-1 tbsp butter, melted
-1 tbsp garlic, minced
-Salt& pepper to taste
-Olive oil
Directions:
-Preheat oven to 400.
-Slice the tomatoes in half horizontally and use a spoon to carefully scoop out the flesh. Place empty tomato halves in a casserole dish and season with salt and pepper.
-Chop the flesh of the tomatoes for the stuffing and combine in a bowl with cheeses, basil, breadcrumbs, garlic, butter, and salt & pepper.
-Fill tomato halves with the stuffing mixture. Top with parm and drizzle with olive oil.
-Bake for 15 minutes until tomatoes are tender, then broil for 1 minute to brown.
