CSA Week 15

Happy Thursday, everyone! I don't know about y'all, but the ragweed has been killing me this week. The nice weather has been making up for it though!! Here's what you'' find in your box this week:
-Tomatoes: Orange Slicers
-Peppers: -Assorted Bell
-Jalapeno and Habanero
-Yardlong Beans
-Yukon Gold Potatoes
-Sweet Potatoes
-Sweet Corn
-Onions

Honey Roasted Sweet Potatoes
Ingredients:
-1 lb sweet potatoes (One large or about 4 small)
-1 Tbsp olive oil
-1 Tbsp melted butter
-Lemon juice & zest
-1/4 Cup honey (or a little less)
Directions:
-Preheat oven to 425. Line a baking sheet with aluminum foil.
-Wash, peel, and cut sweet potatoes into about 1" cubes.
-Heat butter and olive oil in a small saucepan. Add lemon juice, zest, and honey. Simmer for a minute or so over medium heat.
-Pour the mixture over the potatoes and toss to coat.
-Spread on the baking sheet and roast for about 25 minutes.
I was worried that the tomatoes were all going to quit on us a few weeks early, but the vines in the high tunnel kicked it back into gear! It doesn't look like our popcorn plants are going to give us any ears this year. They are only about 2 ft tall and the ears are the size of my thumb. I know what went wrong though, so next year I can correct that and we will have popcorn! The winter squash is growing so so slow, I really hope it will start producing before the season is done. If not, I may just have to do a post-season bonus delivery! The fall greens are starting to take off, so we should have some salad greens in the next week or two.

So I know they are called Yard-long beans, but they are really best eaten as foot-long beans, so that's when I harvest them. I missed this long boy though, and I just had to measure it to see how long it really was. 27.5" is pretty impressive for a bean! I may have to let a few grow to see if I can actually get on that's truly a yard long, just for fun!
