CSA Week 12

Howdy, Howdy, Misfit Members! Here's what's in the box this week:

Banana Pepper & Tomato Baked Chicken

Ingredients:

  • 4 Boneless Skinless Chicken Breasts

  • 1 - 1.5 Cups Diced Tomatoes

  • 1/2 Cup Mild Banana Pepper Rings

  • 1/3 Cup Fresh Parsley (or 3-4 tbsp dried)

  • 1/2 Tbsp Oregano

  • 1 Tsp Minced Garlic

  • 1 Tsp Onion Powder

  • 1 Tsp Paprika

Directions:

  1. Preheat oven to 375.

  2. In a bowl, combine the tomatoes, peppers, herbs, and spices. Mix well to combine.

  3. In a large greased cast iron skillet, add the chicken breasts and then cover in the tomato mixture.

  4. Bake in the oven for 30 minutes until chicken is cooked through.


Crop Updates:

Looks like the second planting of the sweet corn is on it's way out. The flooding and excessive rain seem to have really done a number on it. The good news is that the third planting should be ready to harvest in the next week or so. The ears are still pretty small so it may be more like 10 days, but I can wait!


I've been digging potatoes all week and I'm still only halfway done with the row. I also took up the white onions this week to cure in the packing shed. They didn't get very big, but next year I'll plant them in more shade so the sun isn't soo harsh on them. The sweet potato vines are telling me they are almost ready too, so I'll get digging on those after I finish the regular taters!

It also looks like the yardlong bean vines are finally making beans, so hooray for that! The cauliflower I planted for fall after the spring crop failed looks okay although they aren't making heads yet. The outside tomatoes are taking a big hit from the weather, but I see green growth on at least half of the plants so they will probably fire right back up. The tomatoes in the high tunnel are doing just fine!
