CSA Week 11

Happy Thursday! It's a hot one out there today, so make sure to bring your produce inside as soon as you can. I know most of you leave coolers out for me, but the heat index is going to be over 100 today so those coolers may get a bit warm. Here's what's in the box this week:


-Tomatoes: -Chocolate Cherry & Sun Gold cherry

-Red, Orange, and Purple slicers

-Roma and Tigerella

-Peppers: Some combination of:-Bell, Gypsy, Jalapeno, Poblano and Banana

-Baby Eggplant

-Sweet Corn

-Yardlong Beans

-Patty Pan Squash

-Delicata Squash

Pan Fried Patty Pan Squash


Ingredients:

-2 medium patty pan squash

-1 egg, beaten

-1 cup cornmeal

-1/4 cup grated parmesan

-Just a dash cayenne pepper

-Salt & pepper to taste

-Oil for frying


Directions:

-Wash your squash and slice about 1/4" thick.

-Beat your egg with about a tsp of water in a shallow bowl.

-In another shallow bowl, combine cornmeal, parm, cayenne, and salt & pepper.

-Heat oil in a frying pan over medium heat.

-Dip your squash slices in the egg, then in the cornmeal mixture. gently place in oil and fry until lightly golden brown on one side. Flip and repeat on the other side. Drain on paper towels.


Eggplant Mini-pizzas


Ingredients:

-2 small globe eggplant, cut into 1/2" slices

-2 tbsp olive oil

-Salt & pepper to taste

-1/2 cup Marinara sauce

-1-2 cups shredded mozzarella cheese

-1 tsp Italian seasoning

-handful mini pepperoni slices


Directions:

-Preheat oven to 450. Line a baking sheet with parchment paper.

-Spread the eggplant slices on the baking sheet in a single layer. brush with the olive oil on both sides lightly. Season with salt and pepper to taste.

-Bake for 10-15 minutes, until soft and golden.

-Spread about 2 tbsp marinara on each slice. Cover with shredded cheese and top with pepperoni slices and Italian seasoning.

-Set oven to broil and bake under the broiler for about 5 minutes or so, until cheese is melted and slightly browned on top.


Our farm dog, Red, loves to eat veggies. Unfortunately he's at the farm I just moved from, so he doesn't get nearly as many veggies as he used to. Over the weekend my mom, Gram, and I processed and froze about 8 bushels of corn, so he was able to get his veggie fix he's been missing. Just look at this goober, eating corn off the cob like a human. He's been known to steal squash and cucumbers right off the vine, but corn is definitely his favorite! He was one happy boy.
