Happy Thursday! this week's features:
-sweet corn
-tomatoes
-grape tomatoes
-cherry tomatoes
-eggplant

Bacon Fried Corn
Ingredients -6 slices bacon, diced -1/3 cup onion, diced -4 cups corn -1 tsp sugar -salt and pepper to taste -2 tbsp chives, sliced Directions -Fry the bacon in a large frying pan over medium heat until crisp. Remove from the pan and place on a paper towel to drain. -Remove all but about 1 tbsp bacon grease from the pan. -Add the onion to the grease and cook for about 2-3 minutes. -and the corn, sugar, salt and pepper to the pan. Cook for 8-10 minutes, stirring a few times, until corn starts to brown on the edges and caramelize. -Stir the bacon back into the corn. Top with chives and serve.
Okay soooo my second crop of sweet corn has been so successful that everyone got a dozen ears in their baskets this week. Next week you might get 2 dozen if it keeps up! I literally have been doing nothing but harvesting and putting away sweet corn in my spare time for about the last 2 weeks. Shout out to Gram for freezing over 50 quarts already!
I'll sure take it though, since the last 2 years have been corn-less at Misfit Farm. I'll just have to put Red to work harvesting for me!
