Happy Thursday! Here''s what's in your basket this week:

-Tomatoes

-Grape tomatoes

-Cherry tomatoes

-Eggplant or Eggs

-Sweet Corn

-Swiss Chard

Corn Fritters

Ingredients

-3 cups corn

-1 cup all purpose flour

-1 Tbsp sugar

-1 Tsp baking powder

-2 large eggs, lightly beaten

-3/4 cup heavy cream

-Vegetable oil (for frying)

-Sour cream (for serving)

Directions

-In a large bowl, stir together the corn, flour, sugar, baking powder, 1/2 tsp salt and 1/4 tsp pepper.

-Stir in the eggs and heavy cream until well-combined.

-Coat the bottom of a large frying pan with oil and heat over medium-high heat. Once the oil is hot, scoop 2-3 tbsp mounds of the batter into the pan, spreading it gently into a flat, circular shape. Cook 2-3 minutes on each side. Place on a paper-towel lined plate and season immediately with salt.

-Serve with sour cream for dipping.

Farm news...

We have a new farm addition thanks to my Stella girl! For those of you who are unfamiliar, Stella is my 1,000 pound puppy with hooves that still thinks I'm her mama. She's a weird girl and it took her about 3 years to learn how to be a cow. I bottle fed her (for far too long) and she was raised for the first couple years with my horse, donkeys, sheep and goats, so she didn't interact with any other cows. She gets along fine now, but she's still my big sweet weirdo. Her first heifer calf, Bella, is a mama herself now too, to a heifer calf named Bailey. This new sweet girl is named Della. I'm going to shortly run out of -ella names so I'll have to take suggestions for her future babes!
