Hola, peeps! Here's what's up: Y'all are going to get some random stuff this week. Why? Because all of the early summer veggies are trickling off and the late summer veggies are coming on. That being said, here's what's in your box:
-Cherry Tomatoes
-Summer Crisp Lettuce
-Green beans
-Patty Pan squash
-Banana and Bell Peppers
-Beets
And here's what may be in your box:
-Cantaloupe
-Rutgers Tomatoes
-Kale
-Turnips
-Zucchini
-Delicata squash

Sorry for the randomness of this week's basket, but that is the nature of going with the season! Every now and then, in a transition week like this, we have small quantities of several crops. There's plenty of produce to go around, but not enough for everyone to have a bit of everything.
This week's recipe is using the green beans. And, okay, I know cheese isn't something usually found on green beans, but if you ask me, everything is good with cheese on it.
Cheesy Roasted Green Beans
Ingredients
-Green beans (ends trimmed)
-1/4 cup olive oil
-2 Tbsp Parmesan cheese
-4 cloves garlic, minced (or more, if you're me)
-1 tsp Kosher salt
-1/4 tsp black pepper
-1 1/4 cup shredded mozzarella cheese
Directions
-Preheat oven to 425.
-Line a baking sheet with foil or lightly grease with cooking spray. Arrange green beans in a single layer on a baking sheet.
-In a small bowl, mix together oil, parm, garlic, salt, and pepper. Drizzle the mixture over the green beans and toss to evenly coat.
-Bake for 20 minutes until tender-crisp.
-Remove from oven and top with mozzarella. Return to oven and broil about 4-5 minutes until cheese is melted and golden.
-Season with additional salt and pepper if desired.
I make it a habit to not get political on my weekly blog posts to you guys. Partly because I have zero time to debate things and partly because it has little to do with the veggies in your weekly box. I may make separate blog posts with somewhat divisive or political topics, but not often, and usually only in the off season.
However, I will occasionally drop some science on you fine folks. Which brings me to this: Climate change is getting to scary levels, and we have to do something now. I wanted to share an article I read in Newsweek about the insane heat levels we will be reaching in the US :

Because I don't know about you all, but this humidity is killer. On not just me, but also my animals, and my vegetable plants. I have mild asthma, but when it's super humid, my lungs just scream at me. If I have to start carrying an inhaler around again I'm going to start slapping people, so for the love of tomatoes help me do something about it!
