CSA Week 2

Hello everyone!
This week we have another box full of yummy greens! You will find in your box this week:
-Swiss chard
-Salad mix
-Kale
-Broccolini
-Collard Greens
-Herb plant- thyme or oregano

The salad mix is a combination of arugula and brassica greens, which are great by themselves or mixed with a less bitter lettuce.
Our first recipe of the week is courtesy of Lynn, one of our CSA members, and is something I would have never thought to make! Everyone has heard of potato cakes, right? Well, how about Swiss chard cakes?
Ingredients:
1 bunch swiss chard (about 4 cups chopped)
2 medium potatoes (1/4 cup)
½ onion (1/4 cup chopped)
½ tsp garlic-minced
2 large eggs
¼ cup flour
¼ cup parmesan cheese
¼ cup cheddar cheese
¼ cup parsley/cilantro
½ tsp salt
½ tsp pepper
¼ cup oil
Instructions:
Wash your swiss chard and pat dry.
Chop finely into thin ribbons.
Wash, peel, and grate the potato.
Clean and chop onions finely.
Add all ingredients into a bowl, mixing well after each addition, in this order: chard and potato, then onion and garlic, followed by the cheeses, then the flour and salt/pepper, then finally the eggs.
Add a tablespoon of te oil into a frying pan.
Roll the batter into golf ball sized portions, ten flatten into patties.
Cook them in the frying pan on medium heat for 5-6 minutes on each side. Add oil as needed.
Remove from pan onto a clean paper towel for oil to drain.
Broccolini is similar to broccoli rabe, but with slightly larger florets and fewer leaves. It can be cooked in many of the same ways as broccoli. My personal favorite is grilled, but it doesn’t need to be cooked for very long-5 or 6 minutes is usually plenty.
And I'll be honest with y'all, I don't usually grow collard greens, so if anyone has a good recipe, I would love to hear it!
