CSA Week 16

Happy Thursday, Misfit Members! Here's what's in the box this week:

-Cucumbers

-Squash and zucchini

-Tomatoes

-Cherry tomatoes

-Bell peppers

-Cayenne and habanero peppers

-Hot banana peppers

-Green beans

-Sweet corn

Summer Corn Salad


Ingredients:

  • 1 cup sour cream

  • 1/2 cup mayonnaise

  • 2 tbsp vinegar

  • 1 tsp celery seed

  • 1 tsp salt

  • 1 tsp pepper

  • 2 cups sweet corn

  • 1 pint cherry tomatoes, halved

  • 2 green peppers, seeded and diced

  • 2 cucumbers, peeled and diced

Directions:

  • In a small bowl, stir together sour cream, mayonnaise, vinegar, and spices.

  • In a large mixing bowl, add in corn, cherry tomatoes, green pepper, and cucumber.

  • Add in mixed dressing.

  • Mix well to coat vegetables with dressing.

  • Cover and refrigerate at least 2 hours before serving. (Seriously, it's way better cold!)

*You can also add other things to this if you like, such as cauliflower or broccoli.


This week was a hot one! The plants are looking forward to the rain we are about to get from this hurricane this weekend. One thing I have to watch for when we have a big rain coming in like this is the tomatoes cracking and splitting. Luckily I have a couple hundred plants in the high tunnel, so keep your fingers crossed that it doesn't flood!

I've been picking corn almost every day this past week, and every time I did, the ladies had to come see what I was doing. I ended up giving them the ears that were too bad to keep so now they come walking over as soon as they hear my Gator come around the field.


If anyone would like some less-than-pretty tomatoes for canning, let me know and I will gladly share some extra! I usually save the best produce for the CSA, and while these tomatoes are just as tasty, they are not very attractive.
