CSA Week 6

Howdy, howdy Misfit members! Here's what's in the box this week:
Kale
Cauliflower
Beets- red and golden
Summer squash
Zucchini
Broccolini

Balsamic Roasted Beets
Ingredients:
2-3 Cups beets peeled & diced
1 tbsp olive oil
1 tsp sea salt
1 tbsp balsamic vinegar
1 tbsp honey
Directions:
Preheat the oven to 425.
Grease a large baking dish and set aside.
Peel and dice beets.
Toss beets with olive oil and sea salt.
Spread in baking dish in an even layer.
Bake in preheated oven for 15-20 minutes.
Stir and bake for 10 more minutes until beets are soft to the touch.
Mix together balsamic vinegar and honey.
Remove from oven and add the mixture to the beets. Stir until evenly coated.
Return to the oven for 10 minutes, stirring once halfway through.
Zucchini and Squash Au Gratin
Ingredients:
2 tbsp butter
2 large zucchini and/or squash, sliced
2 medium shallots, minced
1 tbsp garlic, minced
1/2 cup heavy cream
1/2 cup shredded cheese
Parmesan cheese, to taste
Oregano
Salt & Pepper to taste
Directions:
Preheat oven to 450.
In a large skillet, saute garlic and shallots in butter until translucent.
Add squash/zucchini & heavy cream, then add salt & pepper and Parmesan cheese.
Cook 10 minutes until mixture is bubbly.
Transfer to an oven safe baking dish and sprinkle with shredded cheese and more Parmesan. (Alternatively, use an oven safe skillet to only dirty one pan.)
Bake for 10-15 minutes until mixture is bubbly and golden brown on top.

Things have been growing like crazy this week! The first round of lettuce is pretty much done, and the second round of lettuce (Summer Crisp) is coming along nicely. We have flowers on the green bean and purple bean plants, which means we may have beans next week, or at the very least, in 2 weeks. We also have tons of green tomatoes on the vines, and lots of small green peppers popping up, especially on the hot banana pepper plants. Y'all should expect lots of squash in your baskets in the next couple weeks, because they are producing soo much right now!
