CSA Week 5

Happy Thursday, Misfit Members! Here's what's in the box this week:

  • Cauliflower

  • Swiss Chard

I'm going to give you guys a recipe that makes cauliflower my husband's favorite thing to come out of the garden. I actually made these last night and they are soo good!


Baked Buffalo Cauliflower Bites

Ingredients:

-Cauliflower, cut into small florets

-1/2 cup Frank's Red Hot sauce

-1 tbsp butter, melted

-1 tbsp olive oil

-1 tbsp lemon juice

-1/2 tsp garlic powder

-1 tsp salt

Directions:

-Preheat oven to 425 and line a baking sheet with parchment paper.

-In a mixing bowl, whisk together the hot sauce, butter, olive oil, lemon juice, garlic powder and salt.

-In another large bowl, place the florets. Pour the mixed buffalo sauce over the cauliflower and toss to coat.

-Spread the florets on the baking sheet in a single layer. Bake for 25-30 minutes, until the florets are tender and slightly browned.



I started trellising the tomatoes this week, which involves driving a metal t-post between every 4th plant, then weaving twine back and forth between plants to sort of sandwich them. It supports the plants gently without the need for heavier panels or clips.This is done as they grow, about every 6-8 inches. Here's a picture of a row that's already trellised once- it's sort of hard to tell because I was taking the picture yesterday when the wind was blowing like crazy. I'll post pictures later in the season as they grow, showing the different rows of twine. I learned this method during my apprenticeship at UK's South Farm, working on their CSA. Before I implemented this method, there was always a point late in the summer where my tomato plants would just get out of control and I would give up trying to trellis them at all. This makes it possible for me to grow hundreds of plants (this year it's more like 1,500) and keep them all managed.



We have corn up! It's only about 3 inches high, but hey, I'm excited! This is just the first planing of the season. We will do at least one more, maybe two. It depends on how the weather acts and how much more field space I can steal from my brother without him noticing. Since the corn is grown conventionally I have to keep it away from the other produce, so it can't go in my regular fields. Last year I over-planted enough that everyone got SO MANY in their CSA boxes, I sold and gave away all that I could, and I STILL had enough that my Gram, Mom and I put away half a deep freezer full of it. So, this year I decided to scale back by about half. I think I picked a Gator-bed full every night for over a month!
