CSA Week 2

Happy Thursday, Misfit Members! For you weekly delivery folks, here's what you'll find in your baskets this week:

  • 1 head green butter lettuce

  • 1 head red cross butter lettuce

  • Kale

  • Baby Swiss chard

  • Broccolini

  • Radishes




Easy Sauteed Broccolini


Ingredients

  • 1 bunch broccolini

  • 2 tbsp olive oil

  • 4 garlic cloves, minced

  • Salt & pepper to taste

  • Lemon juice (just a drizzle)

  • Red chili flakes (optional)

Directions

  • Wash and cut broccolini into 1-2 inch pieces

  • Bring a pot of water to boil, then add broccolini. Cook until tender, about 3 minutes after returning to a boil.

  • Drain in a colander.

  • Heat olive oil in a large skillet over medium heat.

  • Saute garlic and chili flakes for 1-2 minutes.

  • Add broccolini and saute 2-3 minutes until tender. Season with salt & pepper.

  • Place in serving dish and drizzle with lemon juice.


Sauteed Swiss Chard & White Beans


Ingredients

  • 1 bunch baby Swiss chard (or regular chard, sliced and stems softened)

  • 2 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 can great northern beans, cannellini beans, or other white beans, drained

Directions

  • Wash Swiss chard and slice larger leaves into 1 inch strips.

  • Heat olive oil in large skillet over medium heat.

  • Add garlic. Cook for about 30 seconds, stirring constantly.

  • Add Swiss chard leaves to the skillet and cook for 3-5 minutes until wilted.

  • Add white beans and cook until heated through.

  • Season with salt & pepper.


This week has been eventful. One of the farm's livestock guardians, Odin, somehow managed to tear his ACL and was also diagnosed with hip dysplasia. Large breeds are prone to conditions such as hip dysplasia- Great Pyrenees especially. Send my big polar bear good vibes as he recovers! And don't worry, his sister Luna is there to pic up the slack keeping the chickens safe.








This week's harvest was pretty similar to last week with lots of greens and Spring goodness. We have quite a bit of summer weather in the forecast, so I foresee the summer veggies getting a good kick-start. I noticed blossoms on the squash plants as I was harvesting yesterday, so we should have squash and zucchini in the next week or two. The cauliflower has also started to form tiny heads, which is always exciting!


As always everyone, wash your produce and store greens in the fridge! Most of the produce gets an ice bath rinse before packing but it's always a good practice to wash again before you cook/eat them.
