Happy Thursday, Misfit Members! This week in your basket you will find:
Tomatoes- Roma, Early Girl, Yellow Pear, Sun Gold
Sugar Baby Watermelon
Cucumbers
Summer Squash
Zucchini
Green Beans
Peppers
Bell
Sweet Banana
Hot Banana
Cayenne

Tomato Pie
Ingredients:
5-6 Roma tomatoes, peeled & sliced
a handful of fresh basil leaves, roughly chopped
1/2 cup green or red onion, chopped
1 9-inch pre-baked pie crust
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
3/4 cup mayo
1 tbsp grated Parmesan cheese
salt & pepper, to taste
Directions:
Preheat oven to 350.
Placed the tomato slices in a colander in the sink in a single payer. Sprinkle with salt and let them rest and sweat for 10 minutes.
Pat the tomatoes dry with a paper towel and make sure most of the excess juice is removed.
Layer the tomatoes, basil, and onion in the pre-baked pie shell and season with salt & pepper.
Combine the cheeses and mayo together. Spread on top of the tomatoes and sprinkle Parmesan on top.
Bake for 30 mins or until lightly browned. Let rest for 15 minutes before slicing.
Cajun Pepper Chicken
Ingredients:
Sweet banana or bell peppers
4 chicken breasts
4 cloves minced garlic
6-8 oz cream cheese, sliced into 8 slices
1/2 cup shredded cheddar cheese
Cajun seasoning- I like the Slap Ya Mama brand myself (or make your own with 1/4 tsp each cayenne pepper, oregano, thyme, salt, and 1 tsp paprika)
Directions:
Preheat oven to 375.
Place sliced peppers in the bottom of a casserole dish. Place chicken on top.
Generally sprinkle seasonings all over the chicken. Top with minced garlic.
Top each chicken breast with 2 slices of cream cheese.
Top with shredded cheese.
Bake, uncovered, for 20-30 minutes until chicken is cooked through.
Scoop the peppers from underneath the chicken and place on top and around chicken.
This week has been quieter at the farm. There have been a few rains which was a little hard on the tomatoes. I've been setting traps, putting up row cover, and hanging metal cake pans (they were out of pie plates) to keep the critters out. Looks like we have deer in the cantaloupe and sweet corn, raccoons in the sweet corn, and birds eating the tomatoes. Not to mention the rabbits in the high tunnel! This time of year usually bring the critters around, and they have definitely come out of the woodwork this week.

I had excess banana peppers last week so I did a little canning to save some for this winter. I do freeze a lot of peppers, but I thought this would be a good way to use up quite a few. They turned out so pretty!
I stole these screenshots below of Red from my bother's Snapchat he sent me. This crazy boy somehow got himself on top of the hay bales and just decide to hang out there while Trystan was moving hay. What a weirdo!
