CSA Week 13

Howdy, Misfit Members. Here's what's in the box this week:
Tomatoes- Sun Gold cherry, Yellow Pear, Roma, and Early Girl
Cucumbers
Zucchini
Squash
Eggplant
Peppers- Everyone received something different, because I had several varieties come ripe this week, but only a small bit of each.
Watermelon or cantaloupe

If your melon isn't ripe yet, please let me know and I'll give you 2 next week. The first pickings of the season are always a little hard to tell. My Gram and I ate a watermelon yesterday and to be the first melon of the season, it was pretty sweet!
Roasted Tomato Soup
Ingredients:
3 lb tomatoes, quartered
1 red pepper, diced
1 small onion, sliced
About 8 cloves of garlic
2 tbsp olive oil
2 tsp Italian seasoning
1 tsp salt
black pepper, to taste
1-2 cups evaporated milk (or broth, if you prefer a less creamy soup)
1/4 cup heavy cream (optional)
1tsp sugar
Fresh basil
Directions:
Preheat oven to 425.
Place tomatoes, red pepper, onion and garlic on a baking sheet. toss with olive oil, seasoning, salt and pepper. Roast in the oven for 25 minutes, until softened and beginning to brown.
Place the roasted veggies in a large soup pot. Use an immersion blender to process until smooth. Stir in enough broth/evaporated milk to reach desired consistency. Add heavy ream and sugar, then fresh basil. Warm on the stove until hot.
This week had been interesting. While I was very appreciative of the rain, it did flood my high tunnel pretty badly. Unfortunately this caused the carrots to rot in the ground. Y'all, I was so bummed out when I went to harvest them for the boxes this week and they were just mush. These carrots were big and beautiful, but the mud was just too much for them. I'm fairly certain most of the onions are done for as well. I am resowing them this afternoon to hope for a fall harvest, but I'm not sure if they will be ready by the end of the CSA season.

In better news, I noticed I had a bright yellow eggplant growing on one of my plants this week. Which is very interesting, since I know I didn't purchase any yellow seed. The eggplant in your baskets this week is the baby eggplant variety, so it's better for stir frys and the like.

Looks like we are only a week or two away from sweet corn! The rain really kicked these guys into high gear! As long as I can keep the raccoons and deer away from it, we will be good to go!
