CSA Week 12

Howdy, Misfit Members! So I'm going to go ahead and say there are a LOT of tomatoes in your basket this week. I am currently drowning in a sea of tomatoes, so I hereby bequeath you with extra. Here's what you have this week:
Eggplant
Zucchini
Squash
Cucumbers
Bell Peppers
Orange sunset peppers
Tomatoes- Roma, Black Krim, Yellow Pear, Rutgers, Early Girl, Sun Gold cherry

A couple of you will find a bell pepper or two that are chocolate in color- they're supposed to be like that! They aren't bad or anything. Also the orange sunset peppers are a type of dwarf banana pepper. They taste a bit different though. I swear I have other varieties of peppers, they are just later coming on. I'm waiting on poblano, habanero, and several varieties of hot peppers to mature and ripen.
Banana Pepper Hot Dip
Ingredients:
2 packages cream cheese
1/2 small yellow onion-diced finely
1/2 cup finely chopped banana peppers
6 strips bacon, cooked and crumbled
1.5-2 cups shredded pepper-jack cheese
1-2 cloves garlic, minced
kosher salt, to taste
Instructions:
Add all the ingredients to a small crock pot, and cook for 1 hour on high or 2 hours on low. Stir occasionally.
You can also cook this in the oven at 350 for 30 minutes.
Serve warm with tortilla chips.
Egg Stuffed Tomatoes
Ingredients:
2 medium/large tomatoes
Olive Oil spray
1/2 tsp kosher salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp dried thyme
4 eggs
1/4 cup grated Parmesan
2 tbsp parsley (for garnish)
Instructions:
Preheat oven to 400.
Cut tomatoes in half. Cut just a little off the bottom of each half, so they can stand upright. Scoop the seeds out with a spoon, or a knife if needed.
Spray the hollowed out tomatoes with olive oil. Place them on a baking dish and sprinkle with salt, pepper, garlic powder and thyme.
Break each egg into a bowl or ramekin, then carefully slide into each tomato half. The eggs may be too big, so just discard some of the whites if needed.
Top with parm.
Bake for 20 minutes, or until the whites are set.
I'm so excited that the cucumber vines are finally producing! There are literally only 15 vines, but hey it's better than nothing! Its funny how some crops do so differently year to year, despite the measures I put in place to combat mother nature. Usually I have cukes coming out my ears!There are 4 varieties of cukes, and they are jumbled together so your cukes will vary quite a bit.
I will be putting up shade cloth this week over the peppers, and I've ordered a giant shade cloth for my high tunnel. If it's 90 degrees outside and sunny, it's easily 120 or higher in the middle of the tunnel. Last year my husband and I tied together 2 long shade cloths to cover it, and it left my outside rows un-shaded and didn't cover the tunnel very well, so I decided it was time to order one to fit it. Speaking of Andrew, I want to give him a big shout out for mowing the teff grass that I use as living mulch between my rows this week (and last week too!). Thanks for helping me keep the wheels on my wagon babe!!

I'm cracking up at these silly guard dogs this week. Great Pyrenees dogs are double coated, so I usually don't shave them in the summer, because once they shed that winter layer, they use that lighter coat to regulate their temperature. They can also easily get sunburned if shaved. Odin has been shedding pretty steadily over the last couple weeks. However, this year Luna has not started shedding. They usually start shedding in late June or early July, and I have been brushing her every couple days to try to encourage her to shed, but it's been a no-go. So, I had planned on going ahead and clipping her coat since the heat index has been over 100. I didn't want my poor girl miserable and having a heat stroke. Well, I walked in the pen Monday and she just decided to shed her entire coat in one day. Just look at this- the silly girl shed an entire dog's worth of fur! And that wasn't even all of it. I thought you all might get a kick out of that!
