CSA Week 11

Hey Misfit Members! It's a rainy Thursday and I am grateful for it! We definitely needed it, especially the sweet corn. Here's what you have this week:

  • Tomatoes!: Yellow pear, Sun Gold, Roma's, Black Krim, Red slicer

  • Bell peppers

  • Assorted hot peppers (I may have gotten distracted while harvesting and mixed them up. Whoops)

  • Eggplant

  • Zucchini

  • Summer squash

  • Cucumber(s)

  • Summer crisp lettuce

  • Sweet banana peppers (bi-weekly only)

  • Green beans (bi-weekly only)

Sorry for the terrible lighting in the pic this week. Since it was raining I had to take it inside and the lighting isn't the best.


Banana Pepper & Tomato Baked Chicken


Ingredients:

  • 4 boneless chicken breasts

  • 2-3 tomatoes, diced

  • 1/2 cup banana peppers, chopped into rings

  • 1/2 tbsp oregano

  • 2 tbsp garlic, minced

  • 1 tbsp onion powder

  • 1 tsp paprika

  • 1/4 cup chopped parsley

Directions:

  • Preheat oven to 375.

  • In a bowl, combine tomatoes, peppers, and herbs/spices. Mix well.

  • In a cast iron skillet, add your chicken breasts, then the tomato/pepper mixture on top.

  • Bake in the oven for 30 minutes until chicken is cooked through.

*This goes really well with pasta. If anyone has a homemade pasta recipe they really like, I would love to feature you on my blog one week!


So I know everyone is probably like "what the heck are you doing to me with all these tomatoes and peppers?" Well, those plants have been absolutely thriving these past couple weeks. Since I have extra, I want to share it with you all. I like to chop the peppers and freeze them for use in the winter, and you can always share with friends and family!


There's not been much going on this week, other than the crazy heat! Looks like we may get some carrots after all- it was looking pretty iffy there for a minute. The first round of squash and zucchini are almost done, as are the first round of green beans. Second crops are coming on great though! The first planting of sweet corn is starting to tassel as well, so it won't be long! We will also likely have some melons next week! I didn't take many pics this week, but here's one of Red with his favorite snack: a zucchini. For those of you new to the CSA, he's our farm dog, and he LOVES veggies. Especially zucchini! Every now and then he will pick some off the vine, so I usually keep a couple bigger ones for him so he doesn't help himself to the nice pretty ones!
